  1. Heat oil and butter in a pan.Let the butter melt add garlic and cook for a minute on high flame
  2. Add onions and cook until it turns golden brown in colour
  3. Add tomato puree,salt and cook for a minute.Lower the flame and add the powdered spices and tomato ketchup and cook on high flame
  4. Add cooked rajma beans, veggies, black pepper,and cook for a minute.Add a splash of water if the mixture turns too dry and cook for 2-3 min on high flame
  5. Add boiled rice and mix well gently.
  6. Add coriander leaves and mix well
  7. Mexican rice is ready,serve hot by topping it up with some processed cheese crushed nacho chips and some salsa on side
  8. Salsa ingredients
  9. 2 medium sized diced onions
  10. 3 medium sized diced tomatoes
  11. 2-3 chopped jalapeno
  12. 2 tbsp ketchup
  13. Handful of coriander leaves
  14. Lemon juice
  15. Salt to taste
  16. Use a food processor add all the ingredients,use pulse mode to break down the tomatoes while keeping it little chunky.
