- 4 tbsp ghee
- 2 bay leaves
- 2 inches cinnamon stick
- 4 cloves
- 4 Cardamoms (2 green and 2 black)
- 1 tbsp shahi jeera
- 4 tbsp biryani masala
- to taste salt
- 1 cup curd
- 1/2 tbsp turmeric powder
- 1 tbsp red chilli powder
- 1/2 tbsp cumin powder
- 2 tbsp saffron
- As required Milk
- Handful cashewnuts and raisins
- As required Water
Instructions to make to make Veg paneer biryani
- In a pan put water,soaked rice,1bay leaf,cinnamon stick, 2 Cardamoms and salt.On medium flame cook rice.Rice should be 3/4 cooked. Fry the onions and paneer and cashews, make paste of coriander and mint leaves. Soak the saffron in milk.
- In other pan heat ghee add shah jeera whole spices,onions and ginger - garlic paste.add all vegetables and saute till all vegetables shrinks.
now add curd.Keep stirring
also add spice powder and salt to taste. Mix well.
Add coriander mint paste. - Add water if required,add biryani masala and salt.Now gravy is ready.Now in big pan or cooker first layer arranged gravy then rice than fried onions,paneer and cashew.Make 3-4 layers to follow this.In last layer
Sprinkle saffron milk and coriander.Garnish with raw paneer. Add raisins too. - Take a coal,heat it.Keep in silver foil and keep in biryani pan.Pour ghee immediately and cover with the lid.Cook till rice cooked ya give dum for 15 mins. Serve hot biryani along with raita.
