- 1 bay leaf
- 1 dried red chilli
- 1 cinammon stick
- 2 elaichi
- 2 cloves
Steps to make to make Fried Rice
- Firstly add some ghee in a pan & toss all the veggies (capsicum cubes, cauliflower, carrot slices, boiled corn & peas) (except chopped spring onion) seperately by adding a pinch of salt and sugar and keep it aside, as shown in the image below. Now in the pan, fry the cashews and raisins too. Fry the onion slices seperately. Keep them aside too.



- Now heat a pressure cooker and add some ghee in it. Then add elaichi, cloves, cinammon stick, bay leaf & dried red chilli. When they start spluttering, add rice in it. Fry them on a low flame until the rice changes its colour from translucent to pure white. Now add fried onions to it and mix it well again.



- Now add water to it. Add salt and sugar as per your taste. Now give it a good mix & cover the pressure cooker. Wait for the 3 whistles on high flame then lower the flame and keep it for about 5 mins. Switch off the flame & wait for the pressure to release from the cooker.



- Now remove it on a large bowl and add all the fried veggies & dry-fruits. Now toss the bowl gently so that everything gets mixed well with the rice.


- Now serve it hot with any chinese dish of your choice.
